Fluffy Vanilla Protein Pancakes

Sunday mornings are for pancakes! Our latest recipe are some deliciously fluffy protein packed pancakes that are loaded with health benefits thanksMaximum Vibrance Vanilla Bean!These pancakes are a quick and easy breakfast to fuel you up for the busy day ahead! Recipe below.

Ingredients:

  • 1 scoop Maximum Vibrance - Vanilla Bean
    • 1 cup gluten free flour (Bob‚s Red Mill is fantastic!)
    • 1/2 cup rolled oats
    • 2 Tbs monk fruit sweetener (coconut sugar or date sugar work as well)
    • 1 tsp cinnamon
    • 1 tsp baking powder
    • 1 tsp sea salt
    • 1 banana (mashed with 1/2 cup water, before mixing into the batter)
    • 2 cups unsweetened plant milk, as needed to thin out the batter

Directions:

  1. Stir together all dry ingredients in a large mixing bowl.
  2. In a separated, small bowl, mash the banana then pour 1/2 cup of the plant-based milk and whisk until combined and loosened.‚Ø (Alternatively, can use a blender.)
  3. Afterwards, add the mixture to the dry ingredients and add remaining liquids. Stir until combined.
  4. Heat a large non-stick skillet over medium-low heat and add cooking oil of choice to coat the surface.
  5. Measure out º cup of batter and pour it on the hot skillet, allowing the batter to cook for a couple of minutes, or until the pancakes begin to set around the edges.
  6. Carefully flip the pancakes and repeat the cooking process for the other side for another minute or two, until they are thoroughly cooked.
  7. Repeat this process for the remaining batter.
  8. When ready, stack the pancakes and top with maple syrup or your favorite toppings.‚Ø Enjoy!

Why Veggies? Here‚s Why You‚ll Want to Stock Up This Summer

 

Our love for vegetables runs deep ‚ and for good reason. They're cost-effective, versatile and packed with flavor! Not to mention, vegetables have long been considered a key part of a healthy diet due to their impressive nutritional profile.

 

They're chock-full of nutrients (like Vitamin A and C), typically rich in dietary fiber and lower in calories while still packing a nutrient-rich punch. Vegetables are a key part of a healthy lifestyle, and studies have even shown consumption of certain vegetables‚ namely leafy greens and cruciferous veggies ‚ are associated with cardiovascular health (including superfood broccoli, which also has anticancer and antioxidant properties). Win, win!

 

While the current USDA Dietary Guidelines suggest an average intake of 2  ½ cups of veggies a day, they‚ve stated that roughly 90 percent of the U.S. population falls short on meeting this recommendation. Simply put, you should probably be eating more veggies!

Chocolate Hazelnut Mousse

Fall is here and so are the many delicious and nutritious flavors of Fall. Our latest recipe is a delicious and healthy Chocolate Hazelnut Moussethat is packed with health benefits of hazelnuts, chocolate, and Maximum Vibrance - Chocolate Chunk! Recipe below.

Ingredients:

  • 1 scoop Maximum Vibrance - Chocolate Chunk
  • 12 oz. vegan, semi-sweet or dark chocolate chunks
  • (2) 13.5 oz. cans of coconut cream‚Ø
  • 1 tsp Hazelnut extract
  • 1/4 cup maple syrup
  • 1/2 tsp sea salt
Optional Garnish:
  • Hazelnuts
  • Chocolate shavings

Directions:

  1. Open the cans of coconut cream. In a small saucepan over medium-high heat, transfer the content and heat the cream until it just begins tobubblesaround the edges and steam rises from the surface.
  2. Next, in a large mixing bowl, add the chocolate then stream pour the heated cream on top. Allow to sit for 6 minutes to warm up the chocolate bits.
  3. Afterwards, add the hazelnut extract, Maximum Vibrance - Chocolate Chunk, and sea salt, then whisk the contents until all ingredients are melted, consistent, and silky smooth (about 3 minutes or so).
  4. Then, transfer the bowl into the fridge to chill for at least 3 hours or until settled.
  5. When ready, use an electric hand mixer to whisk the contents until lighter in color and airy in texture.
  6. Finally, transfer into jars or cups, garnish with hazelnuts and chocolate shavings, and enjoy!

Recipe below. 

 

Ingredients:

  • 1 scoop Spectrum Vibrance
  • 2 packets (3.5oz each) frozen acai berry puree
  • 4 pitted Medjool dates
  • 2 cup frozen blackberries
  • 2 tablespoons creamy, natural peanut butter
  • 1 cup coconut water
Garnish:
  • 1/4 cup currants
  • 1/4 cup fresh blueberries
  • 1/4 cup fresh blackberries
  • 1/4 cup your favorite granola

 

Directions:

  1. In a high-speed blender add all ingredients except for the toppings.
  2. Blend until smooth and consistent.
  3. Transfer into a bowl and garnish. Enjoy!
